Peach Galette

Ingredients:
For the crust:
- 1 ¼ cups all-purpose flour
- 2 tablespoons granulated sugar
- ¼ teaspoon salt
- 8 tbsp unsalted butter, cold and cubed
- 6 tablespoons ice water
For the filling:
- 4-5 ripe peaches, sliced
- 2 tablespoons granulated sugar
- 1 tablespoon all-purpose flour
- ½ teaspoon vanilla extract
- 1/2 teaspoon of ground cinnamon
- 1/2 tbsp, unsalted butter, cut into small pieces
For assembling and finishing:
- 1 egg, beaten for egg wash
- 1 tablespoon course sugar
- Powdered sugar, for dusting (optional)
Instructions:

Preheat your oven to 425°F and line a baking sheet with parchment paper.

In a large mixing bowl, combine the flour, sugar, and salt for the crust. In a mixer add your flour mixture and, add the cold cubed butter until the mixture resembles coarse crumbs.

Gradually add the ice water and pulse in your mixer, one tablespoon at a time. Be careful not to overmix. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for about 1 hour.

While the dough is chilling, prepare the filling. In a separate bowl, combine the sliced peaches, sugar, flour, cinnamon, and vanilla extract. Toss gently to coat the peaches evenly, and set aside.

Remove the dough from the refrigerator. On a lightly floured surface, roll out the dough into a circle about 12 inches (30 cm) in diameter. Transfer the rolled-out dough on the parchment paper onto the prepared baking sheet.

Arrange the peach slices in the center of the dough, leaving a border of about 2 inches (5 cm) around the edges. Fold the edges of the dough over the peaches, pleating as necessary. (if there are excess juices do not add to your galette, or it may overflow)

Brush the edges of the galette with an egg wash, and sprinkle the coated sugar over the edges and the top of the peaches.

Add the cubed butter to the top of the peaches.

Bake the galette in the preheated oven for 25-30 minutes or until the crust is golden brown and the peaches are tender.

Once baked, remove the galette from the oven and let it cool for a few minutes. Dust the top with powdered sugar just before serving.

Serve the peach galette warm or at room temperature. It pairs well with a scoop of vanilla ice cream or a dollop of whipped cream, if desired.
