Lemon Ricotta Cake Recipe
- ¾ cup (1 ½ sticks) softened butter
- 1 ½ cups sugar
- 15 ounces whole milk ricotta cheese
- 3 large eggs
- 1 teaspoon vanilla extract
- Zest of 1 large lemon
- Juice of 1 large lemon
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 ½ cups all-purpose flour
- Powdered sugar (for dusting the top of the cake)
- Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and use powdered sugar to coat a 9-inch round cake pan and set it aside.
Prepare the Wet Ingredients: In a large mixing bowl, combine the softened butter and sugar. Using an electric mixer cream them together until light and fluffy.
