  • 1/2 tsp Kosher salt 
  • Freshly ground pepper

Instructions:

Step 1: Cook the Chicken (or buy a couple from the rotisserie)

  1. Preheat your oven to 375°F (190°C).
  2. Place the chicken parts on a baking sheet and drizzle them with olive oil. Season with a pinch of salt and pepper.
  3. Roast the chicken in the preheated oven for about 45 minutes, or until the internal temperature reaches 165°F (74°C) and the juices run clear.
  4. Once cooked, let the chicken cool slightly. Remove the skin and bones, then shred the meat into bite-sized pieces. You'll need about 4 cups of shredded chicken.

Step 2: Prepare the Dressing

  1. In a bowl, whisk together the mayonnaise, lemon juice, and Dijon mustard.
